Red mullets in citrus sauce


A healthy fish recipe that's very quick and easy to do.

Ingredients: (for 2)

8 red mullet filets
6 spoons of olive oil
1 orange cut into segments
150ml orange juice
Juice of 1 lemon
2 spoons of flour
15 gr butter
2 chopped anchovies (tinned)
Chopped basil leaves
Salt, pepper.


Put the mullet filets in a dish and cover with olive oil, place the orange segments on top, and season with pepper. Cover and leave in the fridge for 4 hours.
Remove the filets from the marinade and dry them. Season with salt & pepper and coat the filets in flour. With 3 spoons of the marinade in a hot frying pan, fry the mullets 1 minute on each side. Once cooked, keep them on a warm plate. Empty the remaining marinade from the frying pan. Then melt the butter, add the rest of the marinade in the frying pan, and add the anchovies until they completely dissolve. Add the orange and lemon juice, and to let the sauce reduce. It should become siropy, at this point add the basil. Place the mullets on a plate, cover with the sauce and serve with rice.
