Greek cucumber salad

The weather is quite gloomy, spring is late... So, we will bring some sunshine to our plates this evening to drive away the rain! We adore this starter in the summer. It's fresh and tangy, and I also use of it to marinate my chicken skewers for the barbecue (without the cucumber of course!) And the girls adore this recipe...

Ingredients:
1 cucumber
Juice of 1/2 lemon
1 pot of natural yoghourt
1 clove of garlic
4 spoons with olive oil soup
Chopped mint leaves
Salt & pepper





Peel the cucumber and to cut it into small cubes. Prepare the sauce with yoghourt, lemon juice, the finely chopped or crushed garlic, olive oil, salt, pepper, and chopepd mint. Mix well. Add the sauce to the cucumber, leave in the fridge for an hour. Delicious with pita bread. Sunshine on your plate!
